The Recipe

Cowboy Caviar

Ingredients:

  • 1 can (15 oz) black beans, rinsed and drained

  • 1 can (15 oz) black-eyed peas, rinsed and drained

  • 1 cup sweet corn - fresh is my favourite

  • 1 cup cherry tomatoes, diced

  • 1/2 red onion, finely chopped

  • 1 red bell pepper, diced

  • 1 green bell pepper, diced

  • 1 jalapeño, seeded and finely diced (optional)

  • 1/4 cup fresh cilantro, chopped

  • 1 avocado, diced (add just before serving)

For the Dressing:

  • 1/4 cup olive oil

  • 2 tablespoons red wine vinegar

  • 1 tablespoon lime juice (about 1 lime)

  • 1 teaspoon honey or agave

  • 1/2 teaspoon chilli powder

  • 1/4 teaspoon cumin

  • Salt and black pepper to taste

Instructions:

  1. In a large bowl, combine the black beans, black-eyed peas, corn, tomatoes, onion, bell peppers, jalapeño, and cilantro.

  2. In a small bowl, whisk together the olive oil, red wine vinegar, lime juice, honey, chilli powder, cumin, salt, and pepper.

  3. Pour the dressing over the bean and vegetable mixture. Toss to combine.

  4. Just before serving, gently fold in the diced avocado.

  5. Serve with tortilla chips as a dip, or as a fresh salad. I love the Grain-Free chips by SIETE.

Tips:

  • Adjust the spice level by adding more or less jalapeño.

  • Can be made ahead—wait to add the avocado until just before serving.
